blueberry lemon scones.

We had a snow day this week, and I thought it would be fun to make a treat for the family for breakfast. We had some blueberries in the freezer, and I was craving scones so I decided to go for it. They turned out absolutely perfect. I love adding lemon to many blueberry things because I think it gives such a nice freshness, so I added a couple drops of Young Living Lemon EO to the dough and topped it with a lemon glaze. Perfectly delicious.

Ingredients

Dough:
2.5 cups flour
1 TBSP baking powder
1/3 cup sugar
1/2 tsp salt
3/4 cup butter, cold and cubed
1/2 cup milk
1 egg
1 tsp vanilla
2 drops Young Living lemon essential oil
1.5 cups blueberries (I used frozen)

glaze: (optional)
2 tbsp melted butter
2 tbsp water
1 cup powdered sugar
3 drops Young Living lemon essential oil


Directions:

Mix your dry ingredients in a stand mixer, slowly add the cubed butter and let combine for about 5 minutes. Meanwhile, mix milk, egg, vanilla, and lemon eo in a bowl. Slowly add wet to dry until combined. Here, I turned the dough out on a floured surface and gently worked in the blueberries. Don’t over work. Chill the dough for about 10 minutes. Turn out onto a floured again and roll into a rectangle. Using a pizza cutter, cut into squares, then diagonally into triangles to make about a dozen (I think I had 14). Place on a parchment lined baking sheet and bake at 425 for 14-15 minutes.

Combine the glaze ingredients. Let the scones cool for a few minutes before glazing so it doesn’t completely melt through. Enjoy!
