chicken sausage and brussel sprouts quiche

This is hands down our favorite quiche. I usually make it when I can find Apple Smoked Gruyere at Aldi because it definitely takes it up a notch, but Colby Jack works fine too. I also buy all our groceries from Aldi and it makes things easier!


Makes 2 quiche

Ingredients:

2 pie crusts (pre bought or homemade, I use @joannagaines recipe from the first Magnolia cookbook)
One onion, diced
2 tsp minced garlic
1 package (8oz) chicken sausage, diced
1 pagkage (16 oz) Brussel sprouts, halved
1 cup Shredded Cheese
A dozen eggs
Half cup milk
1 tsp Paprika
Salt
Pepper

Directions:

Preheat your oven to 375.

Blind-bake your crust according to directions or a couple minutes less.
Dice your onion and saute until translucent. Add garlic and cook about 30 seconds.
Chop sausage, and brussel sprouts, set aside. 
Whisk together eggs, milk, paprika, salt and pepper to taste.
Assemble the quiche with pre-baked crust, spreading ingredients equally between the two crusts. I do it in this order: onion and garlic, sausage, cheese, then the egg mixture. Place the Brussel sprouts on last. It makes it pretty.

Bake for 20-25 minutes. Let cool and enjoy!
