peanut butter pie.

My husband's birthday was last week and around here if you don't want cake, you don't have to have it. You can pick any dessert you want, and it will be made for you! So my husband and I created this pie a while back, and it will blow your mind. I adapted an old recipe from my husband's grandmother for the filling and used my tried and true no-bake cookie recipe for the crust. You heard that right: no-bake cookie crust! So yummy! Here is the recipe: First, whip up a batch of no-bake cookie mixture found here.

It will have enough to make the crust and 6-9 cookies afterward, so bonus!

Spray a pie-pan with non-stick spray. Pour some of the no-bake mixture into the pan and use the bottom of a glass to press it in to mold it. This may take a few minutes because it won't set right away. I usually pour the mix in, scoop out my cookies from the rest, and then go back and mold the crust. Then I pop it into the fridge to harden while I whip up the peanut butter filling.

Peanut butter pie filling ingredients:

8 oz. cream cheese
1/2 cup powdered sugar
2 tbsp milk
3/4 cup peanut butter
1-8oz. tub cool whip

In a mixer, beat together cream cheese, sugar, milk, and peanut butter until completely incorporated. Fold in the tub of cool whip slowly to keep a nice fluffy texture; it might take a few minutes. Spread filling into hardened crust and chill for an hour (if you can wait that long!)
